Tabouli Salad


Nothing says Spring and Summer like a fresh ingredients! Whether you grow your own parsley and mint, or buy fresh from your local grocery store, this salad using fresh, vibrant ingredients for a delicious meal or side dish!


Yield: 4 servings (approx.)


Ingredients:

  • 1/2 cup wheat Bulgar (dry)

  • 1 green onion, diced fine

  • 3 cups minced fresh parsley

  • 3 medium tomatoes, diced small

  • 1 English cucumber, diced small

  • 1/2 bunch of Mint leaves, chopped (or 2 TBSP dried mint)

  • 3 Tbsp. extra virgin olive oil

  • 3 fresh lemons, squeezed (to taste)

  • sea salt and pepper to taste, according to taste

  • 1/2 Tbsp. hot pepper, diced fine (optional)


Preparation:

  1. Place 1/2 cup wheat Bulgar in a bowl. Fill bowl just above Bulgar with lukewarm water. Cover and set aside until water is absorbed.

  2. Chop vegetables and place in large bowl.

  3. Chop parsley fine, using a knife, or place in food processor for an easier and more consistent process.

  4. Combine all remaining ingredients with the vegetables, parsley and Bulgar and mix well.

  5. For added flavor you may want to add more olive oil, salt and lemon juice according to taste.


This delicious and healthy Mediterranean salad serves well on its own or as a side salad!
