Sausage & Kale Bowl

Looking for a savoury breakfast, far from the old cereal and milk combination? Try this sausage and kale dish with a lightly fried egg!


Ingredients:


  • 1 cup fresh kale, loosely chopped

  • 4 cremini mushrooms, diced

  • 1 sausage, lean, sliced

  • 2 tsp olive oil or 1 tbsp vegetable oil

  • 1 tsp dried oregano

  • Salt & pepper to taste

  • 1 egg

  • 1 slice sourdough bread

  • **Optional - for a heartier bowl, add green bell peppers and onions


Method

  1. Heat oil in a pan over medium-high heat

  2. Saute sausage, until lightly browned. Add the mushrooms and kale (and other vegetables of your choice), and saute until cooked, reducing heat half-way through. Add salt and pepper to taste.

  3. In a separate pan, spray with non-stick spray and heat over medium-high heat. Crack one egg and fry until your desired cook. Add salt and pepper to taste.

  4. Once cooked, place sausage and kale mixture in a bowl and top with the freshly fried egg. Serve with a side of lightly toasted sourdough bread, perfect for dipping in the egg yolk!
